Savoury Muffins

The perfect grab & go snack, or use it to form the base of your breakfast!

INGREDIENTS

(makes 3 large muffins)

  • 1 medium zucchini

  • 1/2 a punnet of cherry tomatoes

  • 100g reduced fat feta cheese

  • 3 eggs

  • 1 cup self-raising flour

  • A pinch of salt & pepper

METHOD

  1. Preheat oven to approximately 200degrees celsius and grease a large muffin tray

  2. Chop cherry tomatoes into half and lightly cook in a frying pan with a drizzle of olive oil (remove from heat and allow to cool for a few minutes)

  3. Wash zucchini & grate finely

  4. Take grated zucchini by the handful and squeeze over the sink to remove excess water

  5. Roughly chop feta into cubes/pieces

  6. Add zucchini, tomatoes, feta cheese, eggs, flour, salt & pepper in a bowl and mix with a fork until just combined (avoid over mixing)

  7. Spread mixture across 3 muffin holes

  8. Place in oven for ~15-18minutes

  9. Enjoy!
