Savoury Muffins
The perfect grab & go snack, or use it to form the base of your breakfast!
INGREDIENTS
(makes 3 large muffins)
1 medium zucchini
1/2 a punnet of cherry tomatoes
100g reduced fat feta cheese
3 eggs
1 cup self-raising flour
A pinch of salt & pepper
METHOD
Preheat oven to approximately 200degrees celsius and grease a large muffin tray
Chop cherry tomatoes into half and lightly cook in a frying pan with a drizzle of olive oil (remove from heat and allow to cool for a few minutes)
Wash zucchini & grate finely
Take grated zucchini by the handful and squeeze over the sink to remove excess water
Roughly chop feta into cubes/pieces
Add zucchini, tomatoes, feta cheese, eggs, flour, salt & pepper in a bowl and mix with a fork until just combined (avoid over mixing)
Spread mixture across 3 muffin holes
Place in oven for ~15-18minutes
